Chicken Veggie Plate over Spaghetti Squash

Today I have a meal for you that was created completely from leftovers! The chicken and broccoli/cauliflower were leftover from dinner the other night and I had roasted a spaghetti squash to have on hand last night. So all I had to do for lunch today was cut up a chicken breast, combine it on the plate with the veggies, and warm it in the microwave. So easy and so good!

For those of you who have never tried spaghetti squash…oh, you’re missing out! Spaghetti Squash is an amazing nutritional substitute for, you guessed it, spaghetti! Now, don’t get me wrong – it does NOT taste like true spaghetti. It’s important that you know that ahead of time or else you will probably be left disappointed. However, it does provide a somewhat similar texture and a much healthier “base” for many traditional recipes. Check out this comparison: a 1 cup serving of regular spaghetti typically yields ~221 calories and 43g of total carbs while a 1 cup serving of spaghetti squash yields a mere 42 calories and 10 total carbs!! It also contains many nutrients, including folic acid, potassium, Vitamin A, and beta carotene. I would say that’s worth the swap!

I typically roast the squash, split in half, face up in a 375 degree F oven for ~50min. I brush olive oil on top and sprinkle with salt, garlic powder, and pepper, to taste, before placing it in the oven. Once done, you just take a fork and scrape the insides out into strands.

I’ve given you one simple meal above to try; however, here are a few more recipes that are also delicious! So now I challenge you to use spaghetti squash at least once in a meal this week. I typically roast a big squash on Sun/Mon and use it throughout the week so expect to see it in several different recipes!

  • Spaghetti Squash, marinara sauce of choice (I like the sausage and pepper variation), with andouille sausage to top
